Egg Wraps with tomato, avocado and cheese |

Ingredients for 1 wrap
• 1 egg
• 1/2 avocado
• 1 tomato
• soft spreadable cheese
• chopped parsley or coriander
• sunflower margarine
• lemon juice
• salt, pepper

Directions:
• Beat the egg in a plate
• Add the chopped herbs, salt and pepper.
• Lightly butter a pan and cook the egg both sides as thin as you can.
• Let it cool for a few minutes on a plate, then spred some cheese, add a very thin layer of tomato and avocado (drizzle the avocado with some lemon juice to prevent ossidation).
• Wrapt it up then cut as you wish and serve it. |
